The origin of noodles


The whole history of noodles is one of innovation over the centuries. Noodles were gradually adopted by other cultures around the world.
5000 B.C
Wheat flour, believed to originate in the Middle East, serves as the basis of the first “noodles.” Wheat has been cultivated in southwestern Asia, its geographic center of origin, for more than 10,000 years. There is archeological evidence that it was grown about 5000 BC in Iraq.

4000 BC
The beginning of Chinese civilization started around the Yellow River in northern China, and historical record indicate that the society was matriarchal. The northern Chinese cultivated wheat which was used to make noodles.

Noodles have been a staple in the Chinese diet. Noodles shops became the rage by the Sung Dynasty.

200 BC
Handmade noodles were well established by the time of Han Dynasty (206 BC- 220 AD).

8th AD
The dried noodle –like product introduced by the Arab to Sicily is thought to be origin of dried pasta.

Amidst numerous cultural exchanges, China shares Buddhism and the art of noodle-making with Japan. Buckwheat noodles become a staple of the Japanese tea ceremony.

1138
Arab geographer, Idrisi, travels to Sicily and writes about “triyah,” a food resembling threads and produced in large quantities. According to al-Idrisi, pasta secca was already present in Sicily at least a century before Marco Polo was born.

1400
Marco Polo, the great Venetian adventurer, introduced the Chinese staple dish to Italy upon returning from his travels in the Far East.

At this time dried pasta became very popular for its nutrition, and long shelf; making it ideal for long ship voyages.

1700
The very first spaghetti is produced in Napoli, Italy.

1800
Japanese specialty shops create noodles, similar to those eaten today, but requiring considerable preparation time and effort.
Durum pasta had become street food in Naples, and common in much of Italy.

1958
Nissin company first developed instant noodle. Chicken ramen was introduced in Japan.

1970
Ramen have been a staple in college diets, when Nissan brought them to the United States.

It is believed that noodles originated from China as early as 5000 BC, then spread to other Asian countries.

Some anthropological clues suggest that noodles may have originated in Central Asia, and that the Etruscans had noodles as early as 1000 BC. There are a few scholars who believes that the Arabs were the first to make them.

In the autumn of 2005, archeologists excavating at Lajia on the banks of China’s Yellow River found the world’s oldest noodles . The noodles were 4000 years old and made from a kind of millet unlike modern noodles which are made of rice and wheat.

The ancient noodles resembled the La-Mien, a traditional Chinese noodle that is made by stretching and pulling the dough repeatedly by hand.

The Chinese rulers were the first to enjoy these delicious noodle dishes but they quickly became popular by other people due to the fact that noodles are nutritious, store well , and easy to prepare.

The relationship between noodles and pasta also goes back more than 700 years. It is believed that in the late 13th century, Marco Polo traveled to China and brought noodles back to Italy to add to his country's repertoire of pasta.
